Appetizers, Pasta and Condiments
A Gastronomic Journey in the Belice Valley
We will present you an appetizer and a typical first course: Eggplant caponata, chopped dried tomatoes and Tumminia busiate seasoned with a typical Selinuntine pesto.
Eggplant caponata is a typical Sicilian dish, perfect to start a meal.
• Made with fresh aubergines, tomatoes, onions, celery, olives and capers, all seasoned with vinegar and sugar for a unique sweet and sour flavour.
• The caponata is cooked slowly to blend all the flavours and served cold or at room temperature.
• Another delicacy for the appetizer is chopped dried tomatoes.
• Prepared with dried tomatoes, extra virgin olive oil, garlic, capers and parsley.
• This minced meat is perfect for spreading on bread croutons, offering an intense and aromatic flavour.
Green olives in brine
Nocellara del Belice table olives are one of Italy's gastronomic excellences, originating from the Belice Valley in Sicily. This variety of olive is renowned for its unique taste and versatility in the kitchen.
Nocellara del Belice olives are hand-picked at the right level of ripeness and immediately immersed in a saline solution (brine). This traditional method of preservation allows the organoleptic properties to be kept intact and the shelf-life of the product to be extended.
